We carefully select fish and meat with good fat content that are suitable for Saikyo-zuke, and we use Saikyo miso made from pure rice sake brewed by a traditional brewery in Fushimi, as well as soy sauce aged in wooden barrels. Our "hon-zuke" method involves marinating these ingredients in a specially crafted miso bed for two full days and nights. Depending on the season, temperature, type of fish, and shape, we adjust the marinating time to maximize the umami flavor. We invite you to enjoy the finest Saikyo-zuke from Kyoto.
