Abstract
El sistema agroalimentario se caracteriza por una copresencia de entramados globalizados, alimentos estandarizados y cadenas largas de producción, distribución y consumo, junto con una resigni cación de los territorios y una valorización de los alimentos locales y sus formas de elaboración y/o comercialización particular (Gasselin y Hostiou, 2020; Chi oleau et al., 2020; Rytkonen et al., 2018). En este contexto, surgen y se desarrollan distintas certificaciones de calidad con diferente carácter (públicas/privadas, obligatorias/ voluntarias) y con una amplitud de objetivos que abarcan desde la inocuidad de los alimentos hasta formas de elaboración particular, relacionadas con un proceso particular y/o un territorio específico tales como las denominaciones de origen protegidas (DOPs).
