I'm currently working on a project related to optimizing a vertical farming system in Pas, Manitoba to improve nutrition and reduce the prevalence of diabetes in the Indigenous communities. The project involves process optimization extracting glucosinolate and phenolic compounds and determining the associated pathways related to glucosinolates and certain phenolic compounds to understand the impact of genes associated with processing.
