We use luxurious high-quality white truffles that can only be found in Italy in all of our ramen. Please enjoy the fragrant white truffles that are rarely tasted in Kanagawa.

Food "W Soup with Awaodori Chicken and Honbinos Ingredients"

The basic soup is carefully made by simmering the bones, whole chickens, and feet of Awaodori chickens from Tokushima, extracting the richness and aroma to their best state. We then combine this with broth made from ingredients like Honbinos clams, resulting in a unique soup that can only be tasted at our restaurant. (We have our own unique blend of soy sauce and salt tailored to each.) We also recommend the rich salt soup, which is made by simmering the basic soup at a higher temperature for added depth. (Limited to 20 servings.)

Food Homemade Noodles

High-quality durum semolina flour, rich in protein and vitamins, and rye, which is high in nutritional value, dietary fiber, and vitamins, are used to make thin and flat noodles. We have uniquely blended Hokkaido wheat flour to enhance the characteristics of each ingredient. These noodles are designed to appeal to those who are health-conscious.

The smoked flavored eggs that change daily, fresh pepper that allows you to enjoy the original flavor of the spice, Kujo green onions harvested that very morning from a contracted farm in Kyoto, and the finest seaweed from a well-known, long-established wholesaler in Kanagawa. Here, we use a lavish selection of ingredients prepared with an attention to detail that cannot be fully conveyed.
