The owner-chef, Mr. Ueda, who runs the restaurant by himself, hails from the now-defunct prestigious Tokyo establishment "Toyo-ken." Since his youth, he has dedicated nearly 40 years to French cuisine, having been rigorously trained from the basics. "You can't achieve the real taste with pre-made products," he says, as he meticulously prepares labor-intensive items like consommé and fond de veau that take two days to make, as well as bisque made from crushed lobster. It is best to entrust yourself to Chef Ueda's omakase course when dining here.
