I had decided to have lunch here. I missed the chance to check it out the day before because I hadn’t looked up the hours well enough. (In Kanazawa, the nights might end earlier than in Osaka.) When traveling in the countryside, I love visiting local conveyor belt sushi places and supermarkets, so this was on my list from the start. There were many other candidates, but I aimed for this lively spot. In the heat, I took a quick look at Kenrokuen Garden (just for a glance?) and skipped Kanazawa Castle Park, heading straight here for lunch. I really enjoy sushi because it’s easy to control the amount I eat, and you can experience ingredients unique to the region. Since I was in Kanazawa, my main goal was to try nodoguro (blackthroat seaperch). There was one group ahead of me, but I was seated right away. Lucky! The inside of the restaurant is small, mostly a counter. I was shown to a few tables and took a seat. Wait, what? I have to write down my order on a piece of paper with a pencil provided at the table? It felt quite human and market-like — I actually quite like this style. I started with an assortment of three types of seafood from the Sea of Japan, local Noto salt, and grilled nodoguro. (Nodoguro was included in all of them.) The salt seemed to be local and was delicious, though quite salty. I might have used too much on the squid, leaving me a bit teary-eyed... But truly, each piece was delightful. Even if they didn’t look fancy, they packed a solid umami flavor. Personally, the grilled nodoguro was the champion. The aroma was fantastic. After a little while, feeling a bit settled, I looked at the menu on the wall and saw fugu (pufferfish) and tuna cheek listed. I want to eat that! So I ordered! Both were delicious! I want to come back again! The staff were busy, but they were all very friendly, and I was extremely satisfied. It was a great meal.
