In Hokkaido, it is rare, but all the eel at our restaurant is "domestically sourced live eel." We directly airlift the best eels of the day, primarily from Kagoshima, Shizuoka, and Aichi. The owner carefully selects the eels with a discerning eye to provide the highest quality eel. In the Kanto style, the eel is steamed before grilling, while in the Kansai style, it is grilled without steaming, resulting in a light sauce combined with the aroma of charcoal, creating a unique grilled flavor. Our commitment lies in achieving the original fluffy texture of the eel by grilling it over binchotan charcoal, along with a crispy surface that enhances the eating experience.
Food "Blend of Hokkaido's Finest Rice 'Nanatsuboshi' and 'Yume Pirika'"
The sharpness and aroma of Hokkaido-grown rice "Nanatsuboshi," along with its excellent compatibility with the sauce, and the moderate chewiness and rich sweetness of "Yume Pirika." After extensive research, the owner has pursued the overall deliciousness of the rice as a dish, resulting in the discovery of a combination of rice that pairs exceptionally well with eel.
Food "The Water of the Dragon God, Soft and Collected by Itself."
In the mountains of the Toyotaki area, there is a quiet shrine dedicated to the Dragon God. The famous water we use in our shop, known as Dragon God's Water, springs forth from this shrine. This water, which comes from the melting snow of Mount Sapporo and naturally wells up through the earth, is soft water. It is very gentle and perfect for cooking rice and making dashi (broth). To enjoy delicious eel, having good water is essential.

Inside the restaurant, we have both sunken kotatsu seating and counter seating available. The counter seats offer a special view where you can watch the freshly prepared eel being grilled over binchotan charcoal right in front of you.
