The fluffy and carefully grilled fugu fins are paired with pure rice sake from Tanba. The fragrant fins, grilled using a patented method, release a rich umami flavor. Enjoy this special cup that can only be experienced at Genpin.
Food "Special Ponzu that Enhances the Umami of Fugu"
The supporting role of the premium tiger puffer fish is, first and foremost, ponzu sauce. In addition to the base soy sauce, we are very particular about yuzu and sudachi, using sudachi from Kamiyama Town and Sanagawachi Village in Tokushima Prefecture, and yuzu from Kitō Village in Naka Town, Tokushima Prefecture, which we have carefully brewed in our research laboratory. This is the "Genpin - Secret Genpin Sushi." For the finishing touch of the zosui (rice porridge), we use only the finest selected ingredients from across the country, including rice, eggs, and salt.
