This is how we create our Hakata Junjo Ramen, featuring a pork bone broth that stands out from both Nagahama and Hakata ramen.

We slowly simmer pork belly in a secret sauce blended with traditional techniques and carefully selected soy sauce. This char siu is crafted with consideration for how it pairs with our special broth, capturing rich flavors that melt in your mouth. It's incredibly tender, with a subtly sweet and smooth texture that makes it a true delight.
Food Original Super Thin Noodles
The noodles of "Hakata Junjo Ramen" are made extremely thin to ensure a good interaction with the soup. We are very particular about this thinness. This uniquely ultra-thin noodle falls into an even finer category of Hakata's already thin noodles. However, that doesn't mean they lack firmness or are prone to becoming mushy. Thanks to the technical expertise of Kawabe Foods, we have repeatedly refined and perfected what we now use as our "ultra-thin noodles."
