Sushi Tsubasa Located in Kokura, Kitakyushu, Fukuoka Prefecture. Opened in 2012 and relocated to its current location in 2016, it is one of the renowned restaurants specializing in Kokura-style sushi (Kyushu-style sushi), distinct from Edomae sushi. Chef Tanaka, who trained in French cuisine, spent about eight years at 'Sushi Morita,' an established leader of Kokura-style sushi, before opening this restaurant. Unlike Edomae sushi, which often involves various preservation techniques like marinating, simmering, or grilling, Sushi Tsubasa uses fresh, local white fish and shellfish, highlighting the natural flavors with salt and citrus like kabosu, avoiding the use of grilled soy sauce.
