Today, I was out searching for lunch as usual and finally visited Ramen Labo Shokudo 8080, a place I had wanted to try for a while. It’s located near the Akita underground passage in front of the station. I ordered their signature Harerare 8080 Ramen Shoyu and Rare Chashu Rice. It's a prepayment system, and there are a few counter and box seats. It turns into an izakaya in the evening, which adds another layer of interest as I awaited my meal. First off, the balance of the dish is excellent. They have a solid understanding of how to create delicious harmony. The broth is likely made with flying fish stock! It’s rich in flavor, and the lemon adds a nice touch. The medium-thick hand-kneaded wavy noodles have a pleasing mouthfeel and pair well with the broth! The chashu consists of both braised pork and rare chashu, both of which are delicious! The Rare Chashu Rice has a perfect level of rare doneness that melts in your mouth. It turned out to be an incredibly satisfying meal. I might take a nap this afternoon from being so full! *It was a great meal*
