We procure eel that is kept in the best condition with minimal stress, using the underground water from the Kiso Three Rivers. We use high-quality Japanese eel that contains a lot of good fat, with thick and large bodies. Our unique cooking method removes only the excess fat, achieving a perfect balance of juiciness and a "crispy, fluffy" texture.

"Hida Sansho" is a high-quality variety known as "Kogen Sansho," which only grows in the Okuhida Onsen area of Gifu Prefecture. It is characterized by its small berries and a higher content of refreshing citrus aroma components compared to other varieties.
