Both the ramen and fried rice were absolutely delicious!♪
I visited a tsukemen shop opened by someone from Sanpuku. It suddenly hit me that I had never tried the ramen here before, so off I went! It's been about 2 years since my last visit. I was alone this time. ◼️ Crowdedness, Arriving just before 1 PM on a weekday, I was surprised to see 3 people ahead of me! This place has gained quite a bit of popularity! Shortly after, about 6 more people arrived and started lining up. Well, the food is delicious (^◇^;) I was seated in about 10 minutes. ◼️ The restaurant, It only has a counter, but the spacious counter area is very comfortable. It feels quite modern and stylish. ◼️ Staff, A pleasant woman served at the front, and the owner was very humble and polite—definitely a plus! ◼️ Customer base, There were a variety of customers, and many women were present. ◼️ Menu, They offer tsukemen, ramen, fried rice, chashu rice bowl, gyoza, and more. The kombu kelp tsukemen was added to the regular menu. It seems you can choose to change the noodle thickness for the tsukesoba and make the dipping sauce spicier. ◼️ Prices, Shoyu ramen: JPY 800 Fried rice: JPY 680 Total: JPY 1,480 ◼️ Wait time, It took less than 10 minutes to be served. The fried rice came a bit after the ramen. ↓ Thoughts ↓ ● Shoyu ramen A beautiful soy sauce flavor, with a transparent umami that feels slightly Japanese but doesn't necessarily taste like seafood. You can also sense the sweetness of the soy sauce. The noodles are thin and firm. They’re very delicious and pair perfectly with the broth! The grilled pork is fantastic—crispy and tender! Alongside, there are thick menma, komatsuna, and grilled green onions. Overall, it's an incredibly tasty and well-balanced ramen (*´з`) ● Fried rice It's moist yet fluffy and has a good amount of oil. With eggs, meat, and green onions, it's a simple yet high-quality fried rice. That’s all for now! ☆ I feel like this restaurant has really improved! Next time, I definitely want to try the regular tsukemen again. It seems even tastier now (*‘∀‘) As of my post, the restaurant had a score of 3.36 on Tabelog, with 34 reviews and 736 saves.
Delicious Limited Edition Light Kombu Tsukemen!
This is a restaurant opened by someone from Tsukesoba Sanpuku. I heard they are offering a limited edition kombu kelp tsukemen, and as a fan of kombu water tsukemen, I couldn't wait to try it! ◼️ The restaurant atmosphere is still stylish as ever. The main seating is at the counter, with a chic concrete finish that I absolutely love. ◼️ The staff are polite and humble, especially the owner. The female staff was pleasant as well. ◼️ Crowd level: I visited just before 1 PM on a weekday, and it was moderately busy. ◼️ Customer demographic: Surprisingly, there were quite a few women present. ◼️ Menu: They’ve added fried rice, gyoza, stir-fried bean sprouts, etc., that weren't available when they first opened. ◼️ Drink menu: They offer bottled beer and non-alcoholic beer. Self-serve water is provided in stylish cups. ◼️ Price: Kombu water tsukemen for JPY 900. ◼️ Serving time: It took just a little over 5 minutes. ↓ My impressions ↓ ● Kombu Water Tsukemen: The thin, straight noodles are submerged in the kombu water. They are slippery, firm, and wonderfully chewy. Even without the dipping sauce, the noodles are delicious thanks to the umami of the kombu! The smooth texture of the kombu water is also fantastic. With salt and sudachi (Japanese citrus) on the side, you can enjoy the noodles in various ways. The dipping sauce has a nice acidity and an umami-rich soy flavor enhanced by the chashu. The chashu is thin and tender and absolutely delightful. I enjoyed it in several ways: ① Eating the noodles alone → ② Enjoying with salt → ③ Enjoying with salt and sudachi → ④ Dipping in the sauce → ⑤ Adding sudachi to the sauce. I really loved how versatile it was! In conclusion: Wow, that was a delicious kombu water tsukemen! I wish it could be a regular menu item. Since it's a limited-time offer, be sure to try it quickly if you're interested! I heard this place was opened by someone from the famous Tsukesoba Sanpuku. With that information from a friend, I decided to visit shortly after they opened. ◼️ The restaurant features a counter-only layout, spacious and stylish, with a clean and modern aesthetic. The counter is roomy, and the texture of the tables feels quite nice. ◼️ The staff consists of the owner and two cheerful sisters. They are lively and friendly, providing excellent service! ◼️ As for the crowd, it was a weekday at 12:40 PM, just two days after opening. The place was full with one group waiting, but I was seated right away. ◼️ The clientele is mostly young men, but there are also older customers and individuals dining alone. ◼️ The menu includes tsukesoba, ramen, sour spicy tanmen, dry noodles, two types of chashu rice, fried rice, and stir-fried bean sprouts and meat with garlic chives. Since it just opened, the stir-fry dishes weren’t available yet. ◼️ For drinks, they offer beer and non-alcoholic beer. Water is self-serve, and the water pitcher is unusually stylish. ◼️ Although it’s not specifically asked, options like heated noodles and thin noodles are available. ◼️ Pricing: Tsukesoba JPY 800, seared chashu rice JPY 390, totaling JPY 1,190. ◼️ Service time was a bit over 10 minutes. ↓ Thoughts ↓ ● Tsukesoba: The noodles are beautifully square, thick, and straight. They have an incredibly chewy and pleasant texture—maybe it’s not too cold that makes them feel this great? The soup features a clear and tart soy sauce flavor, with a refreshing quality. It’s rich without being sweet. Inside are menma, seaweed, and green onions. Toppings include pork and chicken chashu, along with green onions. The chicken chashu is moist and tender, providing a lovely bite. The pork chashu is tender and slightly rare, with a rich meaty juiciness. Overall, this is an incredibly delicious tsukesoba! ● Soup Dilution: After my tsukesoba, they bring a cup of soup concentrated broth from the back of the counter. You can add as much as you like. When diluted, the tartness mellows, allowing for a more well-rounded soy flavor. ● Seared Chashu Rice: The delicious chashu is seared to add a savory aroma. It’s not rare, making it hearty and meaty. Accompanied by seasoned green onions, sweet onions, and lemon, the combination of the sweetness from the onions, the saltiness from the seasoned green onions, and the lemon is simply fantastic. This goes perfectly with the rice! Overall, this stylish restaurant with great food and wonderful service is definitely a gem. As their full menu hasn’t been rolled out yet, I’m even more excited for the future! This place follows the opening of '[a:19011276, Tsukesoba Ippuku Mio]' last month. The famous Kofu soul food scene, particularly their 'tsukesoba,' is evolving rapidly. なんかメニューが一新したみたいなので行ってみました(^^)/

平日のオープン10分前、3人待ち。オープン時には8人待ちくらいね。でもオープンしたらすぐ満席や。
12時前には6何くらい並んでた。。。人気じゃ!

そーたさん含めほぼおじさんだったぜ!
◼️お店は、
コンクリート打ちっぱなし感のあるお洒落な店内。広いカウンターはめっちゃ居心地よいです。

めちゃ丁寧な店主ね。感じ良く腰も低く対応丁寧。人気店になってもスタンス変わらないの素晴らしいです。
あとお姉さん一名。

つけそば、醤油ラーメン、白醤油ラーメン、汁なし辛麺、あとご飯ものトッピングね。スーラータン麺は端っこの方にまだ残っていた。
前は昆布水と普通のつけ麺の2種類あったけど、統一されたようです。
チャーハンがあったころが懐かしい(^▽^;)
ハーフラーメン、テイクアウトつけ麺つけ麺などもあります。

キレイな麺の横に鰹昆布ジュレ!
ツルツルしこしこもちもち、最高にうまい麺です。麺用に塩とすだちを最初にくれるので、それで食べてみるとさらに美味しい!で、ジュレもつけて食べるとうますぎてつけ汁使わずに全部食べてしまいそうになる(笑)、、、、でも塩の量は多くないのでそれは無理よ(゚∀゚)
つけ汁は、鶏ガラベースで醤油感しっかり、そこに和風な感じがある。しっかり酸味とほのかな甘み。麺だけでめっちゃ美味しかったけど、つけ汁に合わせるとさらに美味しくてやべーぜ!!
で、つけ汁の中を探っていたらなんとワンタン発見!ツルツルで中身たっぷりでやたら美味しい!
そんでチャーシュー、麺の上は炙り系でジューシーで噛めば噛むほど美味しくて香ばしさもある。つけ汁の方の薄い丸いやつはやわらかジューシーでこちらも最高♪

オープン当初しか通常のつけ麺食べてなかったから、進化に驚愕しました。。
オープン当初はまださんぷくのおもかげがあったのに今やただただおいしいつけ麺屋さんだわ。。
さらに行列が伸びそうだな。。
白醤油ラーメンが次の宿題ですが、いつになることやら( ̄▽ ̄;)
