The dishes are all generous in portion. The standout is the Beef Bourguignon, a classic dish made by simmering wagyu cheek (or shank) in red wine. It has no off-flavors such as greasiness; instead, it boasts a pure, rich umami and depth that perfectly complements the sharp sauce. Additionally, the cod quenelle is exquisite. During my training in France, this was a dish I made continuously from morning till night during the music festival season. The atmosphere of Lyon, the gastronomic capital, fills the body, showcasing the chef's specialty.
