In 2016 and 2017, we received the Bib Gourmand award from the Michelin Guide Tokyo. The "Kokutaiji-yaki" is a dish you must try. The crispy texture of the noodles, enhanced by the strengths of teppanyaki, melds beautifully with the egg, and is coated in authentic Hiroshima-style okonomiyaki sauce, creating a blissful menu item. We use pork belly for the meat, which is infused with fragrant lard, ginger, and garlic. By grilling it with this lard, the dish achieves a delightful balance of flavor that is both rich and light.
