Born in Saga Prefecture in 1986, I have spent nearly 20 years honing my skills in the world of Japanese cuisine and sushi at renowned traditional establishments and hotels. During this time, I also gained experience supporting prominent chefs as their right-hand, where I acquired not only solid techniques but also creativity. With the desire to challenge myself independently, I decided to focus on my passion for sushi and opened "Sushi Kagura" in Kagurazaka in September 2022.

Seasonal ingredients sourced directly from Toyosu Market and sometimes from the production areas. The seasons change from early, peak, to late harvest, and we elevate their deliciousness through cooking that enhances their flavors.
Food From Toasting to Shari Cutting: Sharpening and Refining the Rice with Precision
The rice, known as the lifeblood of sushi, boasts a strong umami flavor, and each grain has an overwhelming presence. We use "Toyama-grown Koshihikari" rice, cooked with silica-rich hard water from Kirishima natural spring water. Aged red vinegar (10 years), rice vinegar, and black vinegar brewed in wooden barrels, along with Okinawa sun-dried salt, create a gentle and memorable sushi rice that is easy on the body and does not lead to food fatigue at "Sushi Kagura."
