He honed his skills at the prestigious sushi restaurant Sushi Yoshitake in Ginza. His signature style is a relaxed and unpretentious hospitality. The course is only "omakase." We offer 10 to 12 exquisite dishes that reflect the changing seasons, along with 10 to 12 pieces of nigiri. The seafood is sourced from various places: tuna comes from Toyosu Market, sea urchin, salmon roe, and monkfish liver are from Hokkaido, snow crab is from Ishikawa, and grouper is from the Kyushu region, ensuring we use the best seasonal ingredients. The sushi rice is a blend from Kyoto by the eighth-generation Gihei, using red vinegar and salt from Christmas Island. Since we procure seasonal ingredients, the menu may change depending on the season and availability.
