After training in authentic Sanuki udon in Kagawa Prefecture, I returned to Nishinomiya City in Hyogo Prefecture and opened 'Iwashi-ya Nishinomiya' which is now celebrating its 12th anniversary. It operates as one of the leading udon shops in the Kansai region. I adjust the salt content of the udon based on the daily temperature and humidity, earning a reputation for its firm noodles.

We use carefully selected wheat flour to make our hand-made Sanuki udon, which is our pride. When the noodles are cooked, the aroma of the wheat spreads, which is a sign of freshness. We extract the endosperm of the wheat, which becomes flour, in a well-balanced manner, using flour specifically for udon that has color, luster, and flavor. We adjust the preparation based on the daily temperature and humidity, and we do not compromise at all, working the dough with our hands. Since we are serious about our noodles every day, we close our business as soon as we run out.

The carefully selected iriko dashi (dried sardines) is blended with kombu and several types of fish flakes to create the base for Sanuki udon broth. The dashi is essential for flavor, and we take the time to prepare it daily in small quantities. For kake udon, we adjust the blend and concentration of the dashi and tare to ensure that each dish, whether kake udon or bukkake udon, is delicious and enjoyable.
