We have invited Mr. Nobuaki Fushiki, known as the "Fermentation Prince," who is a brewing chef and a transmitter of Japan's fermented food culture, to supervise the cooking. He is also active as a lecturer in fermentation classes and is one of the key figures behind the current popularity of "fermented foods" and "koji." With 33 years of experience mastering various cuisines, including Italian and Japanese, he transforms ingredients into something entirely different. Captivated by the mysterious power of koji, he learned about it through self-study. His extensive knowledge, along with his engaging and easy-to-understand explanations, has made him popular, and he frequently appears in media such as television and magazines.
