At our restaurant, we use only domestically produced black-haired wagyu beef. The head chef personally selects the meat, which consists of two simple types: "marbled" and "lean." We primarily use female cattle graded A4 to A5. The texture is significantly different from that of male cattle, and the melt-in-your-mouth flavor of female cattle is truly appealing. We source different cuts and types of meat, so even if you visit us multiple times, you can experience different flavors. As a result, we have customers who stop by two or three times a week.

At other restaurants, "harami" is often grilled with sauce, but we recommend enjoying it with salt at our establishment. The "harami no kyoku" is a rare delicacy also known as chateaubriand. The delicate sweetness and refreshing original sauce complement each other perfectly.
