こちらは石和の四日市場にある和食店になります。まだ今年の5月にオープンしたばかりの新規店舗ですね。ソータ氏の投稿で気になっておりましたので、今回、特別な記念日ということで家族で伺ってみました。入店いたしますと、元旅館の料理長を務められた店主と奥様でしょうか、出迎えてくれました。非常に紳士的な対応です。店内はカウンターとテーブル席が数席あり、席間は仕切りがありますので他者の目を気にすることなく食事が楽しめると思います。落ち着いた雰囲気で良い空間です。5500円のコースをお願いしてありましたのでそちらの提供となりました。以下、いただいた料理の感想になります。
司牡丹 船中八策 純米:切子のぐい呑みでいただくと一層美味しく感じますね。香り高く、辛口でキレが良いですね。料理に合います。
座付:雲丹プリンと焼き茄子の鯛出汁ゼリー掛け:雲丹プリンは程よく濃厚で焼き茄子の旨みとホワイトアスパラの食感が合います。
本日の旬菜盛り合わせ:まず台が置かれ、鬼灯や葡萄の葉があしらわれました。演出が素晴らしいですね。
厚揚げ、青菜、ジャコ:厚揚げが香ばしく、ジャコや青菜の食感と相まって良いですね。
そうめん南瓜:程よい酸味で食欲を増進させてくれます。
薩摩芋、鰊、海老、食用鬼灯、シャインマスカットに蟹を乗せたもの:どれも素材の味を引き出す味付けで美味しいです。鬼灯はほのかな酸味が良いですね。
無花果と青菜のゴマソース掛け:ゴマソースが円やかで良い味ですね。
椀物:鱧とじゅんさい:柔らかい出汁感にフワフワ感のある鱧とプルプルのじゅんさいが合います。
お造り:本マグロの炙り、帆立の低温調理、海老、シマアジ、真鯛、カラスミ:2種の醤油(土佐醤油、海苔醤油)と塩でいただきますが新鮮で良い味でした。
眠り豚はるな低温ロースト&鱸の唐揚げと季節野菜の天婦羅を添えて:眠り豚はるなは柔らかく、旨みがあります。鱸の唐揚げは甘酢仕立てで良いですね。季節野菜の天婦羅も揚げ方が良いです。
卵かけご飯:鶏ひき肉の甘辛さと卵のまろやかさが合います。乗っている海苔が香り高く、味も濃いです。
ジャズが流れる空間で落ち着いており、接客も良かったです。季節で内容も変わるようなのでまた違う季節にでも伺いたいですね。
