心斎橋で友人と会食の場にお邪魔したのはこちら
「魚と炭と鉄板と ととと」さん
その昔、ベティのマヨネーズが入っていた大阪人なら知らない人はいない81ビルの1階。
店内すぐ左にテーブル席、メインはとても長いカウンター席。
店主の包丁捌きを眺めながら食事出来るのは良いですね。
今回はアラカルトではなく「おまかせ上コース」9800円税込を予約しました。
ちなみにドリンクのメニューには単価表記がありますが、単品お料理メニューには単価が書いてないため時価なのかな?と思いきや食べログのメニューには書いてあったので安心です。
さて、「おまかせ上コース」はこちら。
◾️前菜
左から
・筍と烏賊の木の芽和え
筍の食感と香り、烏賊の弾力が癖になります
・プチトマトの白ワイン煮
プチトマトに良く染みた甘みと、白ワインの香りが贅沢な味わい
・鯛の錦糸巻き
鯛の美味しさを錦糸卵でぎゅっと包んであります
口の中で程よくバラけて楽しめます
・ホタルイカの酢味噌掛け
食感良くて新鮮で噛めば噛むほど美味しさが溢れます。鮮度の良さが際立ちます
・茄子と素麺のゼリー寄せ
あっさりとしたテイストでほっこり出来ます
そうめんという季節感もありこういうのが嬉しいですね
◾️お造
・本鮪中トロ
甘くて口の温度で溶けますが、優しい味わい。中トロのレベルを遥かに超えたもはや大トロみたいな中トロだと思います
・愛媛県みかん鯛
みかんの皮を食べて育った鯛。歯応え良くて透明感あって美味しいです
・長崎の紋甲烏賊
キャビアのワンポイントが良いですね
・鹿児島カンパチ
食感と歯応え、鮮度の3大パーフェクト
◾️蒸し物
・鯛の白子の土瓶蒸し
鰹と昆布の一番出汁を使用。この季節は鯛の白子が旬との事。
淡くて上品でエレガントな出汁を堪能出来ました
◾️藁焼き物
・和歌山県産 鰹の塩タタキ
藁焼きのタタキは絶品です
厚みあって柔らかくて食べ応えあります
望むならば、にんにくのスライスと山葵が有れば最高です
◾️焼き魚
・岐阜の鮎の塩焼き 自家製蕪お漬物
塩の素朴な味わいが日本酒をすすめてくれます
とても美味しかったです
◾️天麩羅
さつまいも、ペティーオニオン、鯛、木の芽、天使の海老、菜の花など。
選りすぐりの岩塩で食べると秀逸です
◾️鳥料理
京都産 京赤地鶏
・朝引き鶏の鉄板焼き
白鮑茸
タスマニアマスタード
ベリーラ(大葉の香りする)
程よい弾力。タスマニアマスタードとの相性良いです
◾️肉料理
熊本天草産
・ミスジ肉 フランベ
ソースはりんご風味のバルサミコソース
付け合わせは、滋賀近江の赤蒟蒻、葉山葵と岩塩。
山葵と岩塩て頂くのが好みでした
◾️飯物
季節の土鍋
・桜海老と新生姜の土鍋
魚沼産コシヒカリ使用
香ばしい桜海老の香りが食欲をそそります
赤出汁にはなめこが入っております
とてもビターな味わいのお味噌汁に一息。
◾️甘味
レモンシャーベットと林檎のコンポート
林檎は白ワインで煮ております。
コンポートはフレンチの定番デセール
余談ですが、魚の仕入れ業者だけでも何件か取引しており、その時期の美味しい物を仕入れておられるらしいです。
友人との会食も接待でも使える雰囲気です。
