I visited "Enomoto Tetsuya: Pufferfish and Creative Japanese Cuisine" with my husband, located just a 10-minute walk from the North exit of JR Tachikawa Station. This restaurant features a refined space styled like a Western house from the Meiji era, offering pufferfish dishes and seafood, as well as creative Japanese cuisine made with abundant local ingredients, such as Tachikawa's free-range golden eggs and pesticide-free vegetables, and a variety of Japanese sake to pair with the meal. We went there on a weekend night. The interior has a warm atmosphere filled with the warmth of wood, and the hybrid Japanese-Western style where you take off your shoes is very relaxing. For our meal, we ordered a "Seasonal Pesticide-Free Vegetable Salad," a "Sashimi Assortment," and "Tora Fugu Sashimi." We enjoyed a "Draft Beer - Suntory Premium Malts" as well. The "Sashimi Assortment" featured local fish shipped directly from Himi Port in Toyama Prefecture, known for its rich sweetness and excellent texture. The beautifully arranged dishes enhance the overall enjoyment. The "Tora Fugu Sashimi" is something we rarely get to have at home. Its firm texture and light white fish flavor are complemented by a refreshing ponzu sauce with a hint of citrus that deepens the taste of the pufferfish, making it a perfect match for Japanese sake. The "Seasonal Pesticide-Free Vegetable Salad" is also visually appealing with a variety of vegetables served in an artistic dish. The dressing made from carrot and onion pairs exquisitely with the vegetables, allowing us to savor their flavors and textures. With many other side dishes and drinks to enjoy, we were completely satisfied. "Enomoto Tetsuya: Pufferfish and Creative Japanese Cuisine" is a wonderful restaurant. Today was the best dinner ever.
