I believe that the best tonkatsu in Japan is at Maru Ichi in Kamata, but I recall that the owner trained in Omori. I think of tonkatsu as a perfect trio of meat, cabbage, and sauce. There's no need for salt or anything else. The meat and sauce are especially important, don't you think? Maru Ichi in Omori also has its own homemade sauce, which is quite good. I recommend arriving before 11:30 AM on weekdays for the best experience.
