Biggest difference are their vibes and where they're in education where Maiko is a lot more quaint featuring girls learning to become Maiko whilst still enjoying yummy food whilst Hibimeshi is a fairly more active feeling show featuring girls in university forming the Food Culture Research Club enjoying good food too.
Maiko is definitely more traditional Japanese in feel and has this somewhat heritage NHK-feel to it whereas Hibimeshi is more just the casual modern city-life of it and feels more in-tone with today's animes.
